Mini Christmas stockings
I thought these were fab.
I thought they would be good hung on a string with a little surprise in side (used as an advent calendar), I have made some already and if I can do them anyone can. Perhaps you could get some parents/grandparents to knit them for your classroom. Each one took me half an hour to make.

Christmas boxes
My daughter and I spent several hours one afternoon making these little boxes. They are so simple and look great. You could make them out of old birthday cards too. Most juniors and probably year 2s could manage them.
